Top quality begins with quality material. This is why our knife steel is manufactured to the highest standards. The ZWILLING special alloy is characterised by an optimum ratio between carbon (hardness) and chrome (corrosion resistance). In combination with the manufacturing process, the composition results in a robust and extremely durable knife that is stable, corrosion-resistant and flexible. Thanks to a heat treatment optimally matched to the steel, this steel achieves between 55 and 58 Rockwell.

Precision-forged from one piece

Forging is the heart of knife production. Our SIGMAFORGE knives are precision-forged from one piece of steel using temperature and force. While only the part from which the bolster, the transition from the handle to the blade, gets its shape is heated, the blade remains unaffected. This gives our knives their unique hardness, edge retention and flexibility.

Innovative technique

The right material hardness is important: If the steel is too soft, the sharpness of the blade quickly diminishes. If it is too hard the steel breaks. With our innovative FRIODUR blades the steel goes through 4 steps of heat treatment. The last step, ice hardening, improves hardness, wear behaviour and corrosion resistance. In the final process, tension is removed from the material, resulting in high flexibility and safety in use and preventing blade breakage.

Tips for long-lasting sharpness

Even a good knife should always be cared for to ensure its sharpness. Therefore only use flexible cutting boards such as bamboo and plastic. A sharpening rod sharpens dull blades. To do this, pull the blade along the sharpening steel at a 15° angle in a slight arc and repeat the process on each side depending on the desired sharpness.
