Rhubarb & Rosemary Gin Sour

50ml Chase Rhubarb & Bramley Apple Gin

25ml Lemon juice

Sprig of rosemary

10ml Sugar syrup

1 Fresh egg white

Shake all ingredients except the ice for 10-15 seconds. Then add ice and shake again (this will ensure a nice foam). Double strain into a coupe glass, garnish with a small sprig of rosemary and a rhubarb ribbon if available.
